After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Pours nearly black with a thin tan head. Aroma is chocolatey with notes of alcohol. Mild carbonation in the mouth with notes of dark chocolate and roasted malt. Has a lot of sweetness yet bitterness.

Bottle (bomber) from Systembolaget. Black with beige head. Intense roasted aroma, plenty of coffee, some piney and citric hops. Medium bodied, medium carbonation. Dry, medium bitterness.

Poured from bomber into snifter. Deep, dark brown with khaki head that fluffs up a little then breaks down to some bubbles around the edge. Scent is heavy with roasty, chocolate notes out of the bottle, then fades out as it sits to a more malty/ "stouty" scent. Taste has roasted malt, chocolate, a little boozy heat, and some coffee/ dark chocolate bitterness in the finish. Feel is nice and smooth, and it oats the mouth a little, but not too much. This is a fantastic beer, really tasty, pretty well balanced. I think maybe a little bit of age to tame the bitterness a little more would probably make it perfect (I’m going to buy another one or two bottles and find out!)

Aroma is medium-heavy malts, dark chocolates and a small roasted nose-tickling sensation. The flavor is old coffee, dark chocolate, roasted malts and dried berries. I actually pick up a distant note of black currant, but that can be my brain pulling a prank on me. There’s also a soft note from liquorice and the after taste lands in bitterness that is pleasant. This one is very smooth and well balanced

Bottle shared at a tasting. BB Jan 2015. Deep brown-opaque black with a thick beige-brown head. Very roasted aroma, with strong notes of coffee and dark chocolate. Sweet, coffee, cocoa, dried fruits, licorice, alcoholic but not offensive, decent hoppy bitterness. Rather full-bodied, soft carbonation, smooth and creamy, long sticky aftertaste.

Bottle sample at a tasting at Mastikim, Ra’anana. Thanks zvsn. Opaque black with medium brownish bubbly head. Sweet aroma of vanilla, coffee, dark chocolate, a bit woody, licorice. Sweet vanilla flavor, coffee notes, notes of coconut, sugary, roasted malt, sticky dry bitter-sweet finish. Light carbonation, creamy, full-bodied. Very nice.

Near black with tan head. Aroma of coffee, chocolate, light acidity and some leather. Taste is similar, massive, rich, full with roasted coffee notes and chocolate. Nice and creamy.

Bottle from Systembolaget. Aroma of dark chocolate, liquorice, roasted malts and coffee. Almost barley wine? Taste is great with mostly dark chocolate, liquorice and dried fruits. Nice tanned head and good mouthfeel. Need one more layer to hit the next level.
