Pygmy Twilight is a blend of three barrel aged sours. Each sour began as the same base beer. They were then put into three cabernet barrels from Kinkead Winery from Ohio. Each barrel was given a different Brett strain. after 5 months of Brett fermentation Pedio and Lacto were added. A combination of these three beers created Cuvee De Jackie which is in the data base. After a year of being in the barrels I then added fruit to each barrel. One got Apples, one got Grapes, and one got pears. This is a blend of all three designed for the boulder SourFest.
