Description:
Gaia is an ice perry made from pears hand picked, crushed and cold pressed. No pear falls on the soil is added to avoid altering the flavors of a fruit at optimum ripeness. The sugars are concentrated exclusively by natural cold winters in Quebec, the so-called freeze concentration. The development and fermentation at low temperature span several months to develop a fragrance and flavor incomparable bouquet.
