This Backwoods Cyser (ísize-erí: a honey wine made with apples) was made with Michigan apple cider and a blend of Michigan star thistle, buckwheat and wildflower honeys. Once fermented, we placed the cyser into bourbon barrels and aged it to taste. The finished cyser is full bodied with smooth apple-honey character. Finishes with a touch of caramel, oak and bourbon.
