Here’s the scoop: 8% fresh Four 12% Four aged in Ransom Old Tom Gin barrels 22% Four aged in Ransom Old Tom Gin barrels with brettanomyces claussenii and lactobacillus 58% Four aged in Ransom Old Tom Gin barrels with brettanomyces claussenii and lactobacillus with apricot puree 50% of the brett/lacto aged beer is with Upright’s usual French saison yeast, the other half is primarily fermented with yeast propagated from a De Ranke bottle.  And it’s only 4.75% ABV so its a wonderfully complex dinner beer!
