German brewers transplanted to America found themselves in a climate much hotter than they were used to. They responded to the demand for ever lighter and drier beers by incorporating adjunct grains in the mash. Corn (maize) was an obvious candidate because of its wide-spread availability. Our American-style lager uses a 25% corn mash to give the finished beer an especially light body. Bavarian lager yeast working at low temperatures produces a clean, bright flavor. Served ice cold and well carbonated, it goes great with hot dogs and volleyball.
