Description:
"Style" is a dirty word in Belgium and as you may have guessed can be around our brewery, as well. Saisons, traditionally, are fermented to dry tartness and liberally hopped (for a Belgian style, anyway). Witbiers are slightly sweeter, usually spiced, and always pretty light in color. Why compromise? Hoppy for a witbier, possibly? Offbeat for a saison, for sure? Our unique contribution: Triticale, a relatively modern hybrid of wheat and rye. Tradition gets the Deep Ellum treatment.
Hops: Summit, Palisade, Liberty.
Malts: Pilsner, Vienna, Honey.
Yeast: House Belgian blend.
Other: Flaked Triticale.
