Having never tried commercial mead before, we went about making mead the same way we made beer: carbonated with very little sweetness. The first batch was horrible, completely disgusting. As stubborn as we are, we continued making mead again and again refusing to give up. Each batch was tweaked, the recipe tuned until we finally figured out our exact recipe that is as near perfection as mere mortals can make.
