Today we tap a small keg of Spanish Cedar / Añejo Tequila aged Denamelizer IIPA. I think Spanish Cedar was domesticated just for use with hoppy beers - the pungent, spicy character of the wood just plays so well with hops. The base beer is a 10.4% IIPA with 140 calculated IBUs, and the resulting mixture is probably about 10.7% ABV. I don’t think any evaporation took place.
