Description:
A slightly tart Autumn Saison brewed with rose hips. And it’s red.
The Red Nebyllek pours a slightly hazy light red. The aroma is dominated by the
spiciness of the yeast with a hint of fruity apple. The flavor is much the same. At first,
the peppery, gingery spiciness of the yeast asserts itself but doesn’t overwhelm. The
small amount of caramel malt leaves just enough body and sweetness to balance the
tartness of the rose hips and the soft bitterness of the yeast’s phenols. Hop levels were
kept deliberately low, but also provide a touch off unobtrusive bitterness.
