This cider uses a selection of different apple varieties. The apples are milled and pressed and then transferred to stainless steel tanks to undergo cool fermentation. This allows for the retention of clean, crisp apple flavours. The fermentation is the stopped prior to all of the sugar ebing consumed by the yeast, resulting in a cider with higher sugar levels and lower alcohol. The cider is then filtered and bottled with light carobonation.
