Named after a prehistoric shark-like fish, a fossil of which was found in the Cleveland Metroparks. The most famous specimens are displayed in the Cleveland Museum of Natural History. It is a South German dark wheat with complex, rich, bready and chocolate malt flavors along with fruity esters and spicy phenolics provided by its unique yeast strain.
