have half a beer pitcher of cascade that were in a Randall with Hop Stoopid being poured through it. I want to make a hot sauce using them. Anybody try something like this before? Any general tips when cooking with hops?

Hops, obviously, are really bitter. Whatever you make is going to be strong. Maybe you try something like a pesto?

If you do a hot sauce you could boil the hops in the vinegar first. That should infuse the flavor. You could pitch the actual hops then.
Not going to use vinegar in this one. I have a couple sauces that use pineapple or orange juice in conjunction with lemon or lime juice. I’ve got 32oz of a pineapple/orange juice blend, probably will do a taste test with a hop with lemon and lime juice to see what to use.

This’d be the direction I’d go. Break them out into about 10 equal batches so I can mess up a few times. :-)
I’d probably mess around with something like mint and cilantro in there to balance the harshness of the Cascade bitterness without masking it.

I usually grill the solid ingredients (don’t have a smoker), perhaps some foil or a sort of mesh to put the hops on the grill sounds good, think I’ll do two small batches, one on the grill, one fresh
