Commercial Description:
In the fall of 2008, "The Three" (Todd Ashman, Matt Van Wyk, Zac Treimert) joined forced to brew Collaborative Evil. This dark, delicious creation with spices and exotic sugars could only be made better with time - time in an oak barrel. Here at Flossmoor, that’s exactly what Matt did. Since he’s now brewing in Oregon, this is my tribute to Matt, my standing Ovation to his years at Flossmoor. Cheers! Bryan Shimkos

Bottle brought back from the Station. Pours dark amber with a trim beige head. Smells a lot like Cantillon Iris -- the soapy flower aroma is noticeable from across the table. Very cloying up front with this flavor, but quickly moves into a really enjoyable combination of sour cherries, honey, bourbon, and caramel. Certainly an ambitious, if not strange, brew that I would welcome trying again.

Bottled. Smelly, grass, skunk, stew aroma. Burning alcohol. Grapefruit up front, very harsh, with a caramel, burning booze finish. My best experiences with Flossmoor have been with their lower gravity stuff, and this is no exception. This is a mess.

22oz bottle. Pours black with a tan head. Aroma is of vanilla, honey, raisin, and wood. Smells different in a strange way. Taste is immediately tart, but the tartness subisdies quickly. Lots of honey and raisin in the taste. Has a very sharp alcohol bite that makes it hard to put down. A very dry, underlying wood taste starts to slowly come through as it warms up. The barrel doesn’t really come through until it gets to be room temperature. Before it warms, each sip ends with a taste of yeast, vanilla, and sugar. When it warms, some weak bourbon and wood comes through. The honey taste lingers long after each sip, which doesn’t go well with the bourbon flavors. Mouthfeel is thick and hrd to drink because of all the honey. A muddled mess, no other way to describe it.

22oz bottle from Adam... Pours a dark murky dark reddish caramel brown with a fluffy light beige head... Aroma of dry fruit and vanilla with some underlying assertive spiciness... Flavors are of barrel and vanilla tannins which then develop to a sour tartness with the aforementioned flavors involved. Soft carbonation and mouthfeel.

Bottle, thanks Adam. Pours reddish brown with off white head. Nose of pepper, clove, caramel, honey,, and pumpkin. Flavors honey, prune juice, clove, pepper, caramel, tart cherry, and bourbon. Tasty but oddly sour sorta fall/halloween tasting beer.

Bottle at Paul’s: Brown pour with a tan film of head. Unique, minty aroma. Some raisiny maltose notes as well as a soft oaky bourbon presence. Oily body- very raisiny flavor. Has an odd spice note that gets enveloped by bourbon and raisiny richness. Close to being good.

Bottle shared by MikeTD, thanks man! Pours an amber body with a white head. Citrus, honey, raisins, and some lighter spruce notes. An oak y sweet brown sugar warming with hints of mint, menthol, and mentose. An odd strong ale.

Bomber shared by Miketd! Pours a mostly clear ruby red with a moderate head- some lace. Aroma is very intensely spiced, apple pie, cinnamon, gingerbread with maple and cough syrup and cherry pits- some phenols as well. Flavor is raisin sweet, sugary, brown sugar and molasses, oatmeal raisin cookie, clove, cinnamon, apple, then gets minty - almost toothpaste mint like, with bourbon vanilla, caramel and alcohol heat. A bit messy- I didn’t know what was going on.

Bomber shared by nbutler11 at the Black Friday AZ tasting – thanks Nick! Pours clear dark reddish brown with a thin tan head. The nose is herbal spice, honey and an almost pepperminty aroma. The taste is astringent upfront but that fades into a sweeter caramel, light candied fruits, vanilla and booze. Medium mouthfeel with lots of carbonation. Interesting brew.
