A spongy head of off-white foam settles slowly to a thin film with a thick rim, leaving a wet wash behind to mostly rejoin the pool below. The aroma is very yeasty and bretty, showing a wild must and perfumy, wildflower spice amidst a soft malt base of grain and baked bread. Hints of lemongrass emerge, adding a bright, citrusy hop element, while white pepper and coriander lend further spice depth. The flavor does not disappoint. That same soft, grainy, bready malt base shows a mild sweetness, while the lemony, peppery grass hops add substantial, bittering balance. Lambic influence is subtle, from a tartness standpoint, but it brings that dry, woody brett note that I just love. Very earthy, yet bright at the same time. The palate is softly carbonated, initially round and creamy, finishing on the dry side. Man, this is a really good saison. I don’t think it will age very well, as the hop profile is one of its strong points, but fresh from the bottle, this stuff is pretty neat.

Hazed but bright golden color with small, lasting white head and some thin lace. Aroma is light yeasty white bread, mild lemon, weedy, very farmy. Light bodied with fine, even carbonation, creamy thanks to the saison part, and a bit dusty thanks to the lambic part. Nice combo, very refreshing. Flavor adds some simple Bretty notes, saltine, plenty grassy. Could benefit from some additional lambic acidity, but it’s otherwise a unique and enjoyable beer. kromamc (117), Italy

Pours mostly clear golden with a well-formed white head and a little lacing. Aroma? Two words: HORSE BLANKET. It’s as if they ran a horse around all day with a big ol’ load on its back, then took the dirty, sweaty, horsey blanket from between the horse’s disgusting back and its saddle, then threw the damn thing in the fermenter. And I love it! Some brett and pepper in there as well. Flavor is also very horseblankety, funky, and bretty. A little sweetness from pale malt pokes through the tartness and funk. Some pepper as well. Medium body with mild acidity and fairly lively carbonation. The nose is dry and bretty, nice white pepper presence, citrus rind. Flavor is dry, very nice brett presence with a balancing tartness, lemongrass, some citrus, peppery, yeasty. I wasn’t expecting any particular success from this pairing, anticipating that the best qualities of each style might get washed out by the other. Wrong! It manages improbably to please as both saison and lambic - saisic, baby! Lambon! Nice, bretty and dry, with some yeasty spicy stuff at the heart of the beer and pleasantly tart finish. Good stuff.
