Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

2009 Bottle - Thanks Sam! - Pours out dk amber with a medium off white head...aroma is dark fruit and rich malt, with just a touch of spice...flavour is similarly sweet, some candy, burnt sugar and just slight alcohol kick...nice stuff...

Dark brown pour with no head. Aroma of alcohol and prunes. Another cool, weird label from DdC. Coffee flavor with some esters. A flavorful, malty winter brew.

Pours a amber brown color with an off-white head. Aroma of alcohol, dark fruit, and hops. Taste is dark fruit and caramel malt. The alcohol comes through nicely. It is a bit creamy with little carbonation. Very nice barley wine. Enjoyed in a snifter with a cigar.

This is a damn good barely wine. Dark fruit, sweet malts, subtle hops. Very balanced.

Mohogany pour with an off-white head. Aroma of alcohol, dark fruit, and hops. Taste is dark fruit, alcohol, caramel malt, a little creamy. Little carbonation. Slight hop aftertaste. A nice mellow tasting beer for 9.8% alc. I bet it would age nice.

33cl bottle: The bottle poured cloudy brown with a thin head which quickly disappeared. The aroma was fruity and very wine like. The taste was dry and sweet with malt a strong flavour. Overall a nice sipping beer on a cold night. This was my first barley wine but a nice introduction to the style. I might have to rerate this once i have tasted more examples.

Pours a deep, dark, brownish red with a thick beige head. The aroma is full of toffee, dates, bready English malt, floral hops, nuts, and brown sugar. The flavor is a well blended mix of the characteristics found in the aroma. Mellow but full, lots of brown sugar, and a warm boozy finish. Full bodied with a bitter finish.

Pours a deep caramel brown with one finger of off white head. The nose is hops, caramel, toffee, hints of chocolate, roasted barley, and anise. The taste is big on malted barley, toffee, and caramel followed by chocolate, licorice, and anise. The lingering taste is a nice combination of alcohol, hops, and barley. A pretty similar match to old ruffian and horn dog. Pretty good BW but not in my top 5.
