snowcrash000 (2268) - Cologne, GERMANY - FEB 6, 2021
UPDATED: FEB 6, 2021 This is a fantastic Saison that boasts an incredible range of fruity, spicy, herbal and floral notes, as well as a great balance of mildly tart, sweet and bitter impressions. At first it all seems a little much, but as you drink this you really come to appreciate the complexity and nuance of all the different, quite vibrant and expressive, elements here. It starts out a little sweet and floral, with a distinct, lightly tart and fruity presence as well, but then the herbs and spices kick in, leading to a semi-dry and slightly bitter finish that is followed by a rich, lingering aftertaste. Quite full-bodied as well, with a velvety, effervescent mouthfeel and lively carbonation. While this is not your typical, laid-back and mellow Saison, its boldness of flavor and somewhat unusual flavor profile really make this stand out to me as one the most enjoyable Saisons I've ever had from Fatôme or in general, for that matter. As an interesting sidenote, hops are not listed as an ingredient on the label.

Borresteijn (11296) - Heerhugowaard, NETHERLANDS - NOV 16, 2020
UPDATED: NOV 16, 2020 75cl Fles, thanks Harmen! Fantôme d'Automne 2019. Amber-bruine kleur, witte kraag.

EvNa (4728) - Ede, NETHERLANDS - NOV 5, 2020
UPDATED: NOV 5, 2020 Bottle, 2019. Color: Slightly hazy orange-brown amber, off-white head. Aroma: Malt, yeast, spicy, orange and lemonpeel fruity notes. Taste: Pretty complex mix of moderate sweet and light to moderate tart, light bitterness, spicy and fruity notes. Spicy ginger, liquorice, nutmeg, clove. Fruity orange, tangerine, some lemonpeel. Lemongrass. Also hints of red fruit like strawberry and raspberry. Some cane sugar. Reminds me of gingerbread, only with added complexity. Malty and yeasty background. Liquid autumn in a bottle in a complex and balanced way only Fantôme can do. Very nice.

Gott

ineedbeer (3826) - California, USA - SEP 2, 2020
UPDATED: SEP 2, 2020 Poured from a 750 ml, 2019 vintage bottle. Aroma is really pleasant with nice hint soft citrus, stone fruit and pear. Moderate herbal notes that are slightly peppery but also have some lemon verbena, clove and coriander. Hints of alcohol with light cracker, biscuit and toasted bread malt notes. Pours a slightly hazy copper color with orange and amber hues and a very large, thick, frothy, light tan head that recedes slowly to a small film that persists. Fairly high amount of lacing and faint legs. Flavor is somewhat sweet with light cracker, biscuit, caramel and toasted bread notes. Moderate bitterness and light alcohol spice. Light fruity esters of stone fruit, lemon and pear. Medium light herbal notes of lemon verbena, clove and coriander. Mouthfeel is medium bodied with very high levels of carbonation. Low astringency and low alcohol warmth. Overall, a really nice Fantome that reminds me of the Fantomes of yesteryear. Nicely balanced ester and phenolic notes that work well with the malt profile. Very carbonated but not to the point of gushing.
