COMMERCIAL DESCRIPTION
Wild Fermentation Ale brewed with Honey, Aged in Wine & Brandy Barrels EL CUATRO is made of barley and caramel malts co-mingling with lactobacillus and brettanomyces. After brewing and conditioning, the beer is transferred into brandy & whiskey barrels to age for over a year during an extended Brettanomyces Lambicus fermentation. Prior to bottling, the beer is blended with a small portion of year-old SAHALIE. The only hops added to this beer arrive from the aged SAHALIE. 
The brandy barrels and wild yeast fermentation give EL CUATRO a plum & cherry fruitiness balanced by the slight toast of the malt body.

UPDATED: MAR 10, 2024 2018 bottle split at a share. Can't remember where I sourced the bottle. Pours clear amber with cream foam. Aroma: caramel, honey, wine barrel, funk, light dried fruits. Taste: light tart acidity, sour, caramel, wood, wine, brandy, esters. Medium body with spritzy carbonation. Nice complexity, lots going on.

UPDATED: NOV 4, 2022 Aromas are big honey honeycomb acidic malts oak crackers bready malts and corkscrew. Taste is hugely sour malts rice vinegar sour apples big honey oak vanilla notes corkscrew and some nice wine notes. Overall, intensely sour and delicious. Great stuff.

Aroma: vinegar, dried fruits, fruity esters and honey. Taste: vinous oak, funky yeast and oak barrels. Extremely sour. Next one please!

UPDATED: OCT 12, 2021 Beautiful complex aroma of caramel, vanilla, barrel, funky notes, fruity esters, raisins and floral notes. Pours clear copper, bright, a finger of a creamy off-white head, good retention and nice lacing. Sour, woody, caramel, wood, wine, brandy, estery, raisins and dry fruits, wow. Medium bodied, surprisingly low for its ABV, high carbonation, very quaffable. Alcohol very hidden. A delicious wild ale, rich of fermentation flavours and barrel additions. Excellent.

UPDATED: JUN 20, 2021 Damn, this is one big beer. Super rich, extremely complex, tart but not overwhelmingly so. The aroma reminds me of something exotic and rare and amazing at the Hair of the Dog; the flavor is more tart but delicious all the way through. Other than the flavor intensity, no hint of the ABV. Fascinating to try though I don't know how readily I'd do a whole 750 by myself. Actually probably pretty easily, tbh.

UPDATED: MAY 2, 2021 A 375ml corked and caged bottle, brewed in November 2017, bottled on 1st November 2019. Poured into a 3 Fonteinen stemmed glass. It was a hazy deep amber orange colour, with a thin khaki head that dissipated fairly quickly, while leaving some nice lacing. Aromas of grape, oak, vanilla, brandy, lightly vinous, light funky, with a touch of citrus zest. Tastes sour, tart, oak, dried apricot, stone fruit, hay, honey, with light brandy and orange citrus notes. Medium bodied with moderate carbonation. Overall, enjoyable complex aroma and flavours. A good sipper.
