COMMERCIAL DESCRIPTION
This brew harkens back to our first Anniversary beer, a cascade hopped Saison aged in gin barrels with apricot. That was our first experience using gin barrels, and we’ve grown to love the botanical nuance and oil rich mouthfeel they lend. This version is the first of what will become an annual release and uses a mix of three wine casks along with the gin barrel, which still shows strongly in the beer. The nose opens with a bit of all of the elements- the spirit, herbs and spices, hops, apricot, brettanomyces and wheat. More fruit shows in the flavor and the beer has a historic dry and bitter profile. The four cask blend has about 10% fresh beer (the base for the 2015 batch) added, which brightens the profile and will allow for an interesting conditioning well over an year.

UPDATED: JAN 24, 2019 2019-01-17. Hazy orange body, small off-white head. 3+ Aroma has note of bubble gum, light funk. Flavour is lightly bitter, light Average bodied palate, moderate carbonation. Decent. 7/3-4/7/3/16 Bottle cellared 2+ years shared by ferris at mcberko's.

Tasting at Matt's (same label as the one here, not like the 2017 version, but there are no distinctive signs or vintage on the bottle
Gushing bottle. Murky dark blond colour with excessive head. Smell of foot and mint. Astringent, very yeasty, lightly fruity, and some diaper.
Gone wrong, it probably has a couple of years.

UPDATED: JAN 18, 2019 750ml bottle @ Matt's. Pours a hazy golden orange colour with a medium white head. Nose is light stone fruit, oxidation, and a mild rustic saison note. Flavour is a mix of stone fruit, soft saison yeast, and cardboard. Medium to light bodied, good carbonation, and a mild sweetness with a decent funk.

Bottle. Pours clear golden, medium off-white head, dissipates fairly slowly, good lacing. Aroma is Brett, oak, musty, rustic, lemons, grapefruit. Flavor is very light sweet, light bitter, moderate Bretty funk, dusty, citrus, more Brett. Medium body, high carbonation, soft mouthfeel. Pretty solid.

Bottle. It poured a hazy golden color with a white head. The aroma was of yeast, earth, some fruit and farmhouse funk. The taste was similar to the aroma with more yeast, earth, fruits, farmhouse funk, oak with medium carbonation and a nice aftertaste. Really good.

Sampled at Vyvvy’s tasting. Brought by Todd (hannont). Quite hazy yellow gold orange (?). Juniper thing going on along with wild yeast. Interesting fruit is stone and citrus. A bit of grass and lemon. This has held up well. Soft pale saison malts are just right. Tasty and subtle.

It pours hazy orange with a white head. Lots of stone fruit, botanicals, must and richness. It has a rich body with mild carbonation. The taste has the aroma with more must. Quite good.

Bright golden blonde with a foamy head. Aroma is light hay, smells tart, slightly soapy and slight herbal. Very light sour, juniper, earthy ad finishes very dry. Great!
