Flavour is wood,some sourness and slight notes of sweet grass. A very "smooth" lambic by Cantillon. Was one of my favourite lambics tested at the weekend of spontaneous fermentation. Pours slight hazy/cloudy and golden orange with a huge, bubbly and white head - slowly diminishing. Aroma is tart barnyard, light winegrape fruity. Bitter and light acidic flavoured, vague sweetness beneath. Subdued malt note and a mild dry brett to tart pedicoccus acdity into the finish. Smooth fruity and tart far finish. This is my first Cantillon beer. Slightly hazy gold colour with oaky aromas. Very sour lemon and woody flavours. For someone who has never had a real straight lambic before, it is quite a novelty.
