Clear yellow with no noticable carb & only a few small bubbles which formed the slightest, thinest semi ring, no lace. Aroma is of highly refined, slightly sour apple juice w a trace of bee’s wax. Flavor is of the refined apple juice and a touch of honey and a slight trace of wood. Very delicate and refined, interesting combination of moderately sweet and mildly tart, slightly earthy w a touch of mild spice. Light body. Very clean tasting. Alcohol very well integrated in. Pours a pale white/yellow with no carbonation, no head. Lightly carbonated, but settles fast. I get a big apricot nose to this. Tastes sweet, with apricot, peaches, huge honey, and a sweet finish with no carbonation. Not quite as good as the black raspberry, but still very good. Honey is the dominant taste as well, along with some apricots. The mouth feel is spritzy and fun. Lovely aroma of honey, a bit of yeast, and a hint of apricot. The flavor is again honey along with a stronger yeast component than the aroma would indicate, along with a very light touch of apricot. Not sure what to expect, since this is my second mead and my first melomel Very light yellow translucent body, almost the color of water. Smells fruity and alcoholic. Tastes tart and fruity, with apricot taking the forefront with slight honey-like notes and a bit of alcohol warming. Slick somewhat aqueous mouthfeel with less carbonation than expected considering the appearance. Fairly drinkable for the abv, though there’s a bit of an alcoholic bite toward the finish that is reminiscent of a liquor. Still a decent beverage.
