Oak Theory is our Belgian-style sour. Aged almost 11 months, this will remind you of a Belgian sour beer. Dry hopped version is with Galaxy and Simcoe.

750 mL bottle. Bottled 1/26/2015. Originally reviewed 3/30/2015. Hazy light orange body. Not much of a head. Thin collar. I know neither simcoe nor galaxy smells herbal, but I get a lot of herbal hops. More white wine aroma than the regular Oak Theory. Oak is strong, of course. A little tropical. Taste is a total change of pace. Tropical fruit. Light tartness that combines with the tropical fruit and I get passionfruit from it. Almost sweet. It gets a little more tart as it warms, but not as sour as the regular. Medium body. Medium to medium low carbonation. Very different from regular Oak Theory. The dry hop adds a unique dimension that I didn’t expect.

Bright yellow body, light haze, thin white collar. Although the hops are past their prime, the beer is quite tasty nonetheless. Lovely saison and lambic characteristics.

750 ML bottle C&C Thanks to Forgetfu for all the Casey bottles Hazy golden straw color. Bright white head that falls to a collar and leaves strips of lacing. nose is more restrained than the regular version. Less oak and more mineral, and citrus. Thought the dry hopping mostly cut down the oak nose. Some toast and oak. taste is mineral, grape, citrus, oak, toast. oak is more subtle, citrus is more focused I thought. Good carbonation and great feel. One of the better made US wild ales out there.

Bottle courtesy of André. Pours hazy golden with a small frothy white head that doesn’t leave any trace on the glass while dissipating. Smell is fruity and funky with crackers, lemon juice, pineapple, yoghurt, wine gums, hay, dry soil, barnyard, horse blanket and lemon zest. Taste is sour, fruity and funky. Mouthfeel is dry, tart and medium bodied. Finish is sour with crackers, lemon juice, mango, pineapple, passion fruit, gooseberries, yoghurt, hay, dry soil, barnyard, leather, horse blanket and lemon zest. Very nice dry hop element which hides some of the base beer tannins. Scrumptious!

Bottle... Pours cloudy and yellow with a small, wispy, white head. The aroma is a marriage of grapefruit and passionfruit, accompanied by a moderate level of woodsy funkiness. Medium-bodied with adequate carbonation. Both sour and funky with loads of hop flavor, but a low degree of bitterness. Finishes tart and fruity. Really nice. Bottle courtesy of ctipping!

Bottle with huge props to Adneilsen. Pours clear golden, small white head, some lacing. Aroma is Brett, citrus, grassy, hints of mango. Flavor is light tart, light funk, mineral water, dry dry, fruity and juicy. Light body. Clean as shit. Very tasty.

Bottle thanks to the taken one, Nielsen ! Pours a slightly hazy orange golden color with a finger of white gaseous foam. Lots of guava, lime, pine chips, wet hay and vinous barrel funk on the front with some softer vanilla, round citrus and focused bitterness on the back that balances out the juicy hop goodness nicely ! Damn I wish I could chug this on the daily !

750ml bottle shared thanks to Lukaduke! Pours hazy pale yellow with medium head. Nose has tons of bright lemon lime citrus and tropical fruit complimented by an earthy grassy funk and a hint of wet grain. Taste is similar, tart refreshing body with juicy tropical lime, various grassy citrus notes, with some dusty lemon, dry, some wet woody funk. Finishes with some damp hayfield and lingering dry tropical citrus, balanced acidity. Really good.

Bottle shared by Mark at VT campground, poured a golden color with white head. She’s got some serious funk and twang to her which I now realize was the Galaxy. Went back for a little more of this one....nice balance of dank hops and clean, funky sour notes.
