Commercial Description:
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional 'gueuze,' in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Pours a hazy golden color with a white head. Aroma is funky, sweaty, brett, barn yard, cob web, tart, and tons of funk. Flavor is brett, funk, tart acid, sweat, barn, must, and a tart funky amazing finish.

Pours a slightly hazy orange color with a small white head. Alot of typical Cantillon sour funk and sweetened fruits show up in the nose. Not overbearing sourness though. The flavor had some typical cheek puckering sour tartness to it, along with some sweet fruits, grapes, and Chardonnay. Lemons seem to be always noticeable here as well. I got a touch of the hops in this beer, but it was certainly overpowered by the funk and sour that embodies this brewery. Another great offering.

Vibrant aroma, with more fruit hints than a normal lambic with subtle lemon, orange and peach and lightly herbaceous, floral hops from the dry hop, perhaps? Light orange color. Dry with mild tartness and wld yeast flavors. Well balanced. Really your typical Cantillon lambic, which is still mighty tasty, but I didn’t notice much from the Goldings addition, except a little bitterness.

Pours a murky orange with almost no head. Pretty sour and tart with some bitterness. Citric with hints of vinegar. Medium carbonation.

Bottle: Glowing golden pour with a thin white head. Aroma is soft and mellow, but rich. Taste is so balanced it blends together in a sweet and tart medley. Good balance of oak barrel. Indeed this is amazingly smooth. Nice finish of lingering tartness. Superb.

750 bottle from sloth, thanks man. Pours clear orangey amber, with a small whitish head. Woody, dry, toasty, earthy aroma, really interesting smells. Tart, dry, vinuous, barnyard and cranberry. medium body and gentle carbonation.

bottle Dark golden with a slight haze. Fluffy head. Sourish citrus zest aroma. Flavour is sourish/bitter citrus zest with a touch of iron.

Fantastic aroma. Still (one can immediately tell this is unblended) with little head unless you try hard. Glowing orange/amber. Great barnyard, leather, musty aroma - by the end with the dregs pour there is a real apricot fruitiness. The flavor has an initial hole, not watery by any stretch, but empty, then a bursting bitter finish. Did not detect dry-hopping. Definitely the body of a lou pepe gueuze (a fact observed not by me but by the esteemed JSturm, and in fact he pegged the priming addition of the sugar as in the lou pepe). Delectable and thanks to the VA connection!!
