Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Thanks to ucusty for this one. Caged cork near blinded 3 people as it blew off after only 2 twists of the wire (but seriously, it exploded off the bottle with minimal effort - beware!). Pour is gushing cloudy yellow with huge rocky head, marvelous looking. Aroma is lemon, grass, hay, faint malt, brett funk, peaches and orange. Flavor is lemony, funky brett, black pepper (possibly the ginger), floral, lavender, and crisp. Alcohol seeps in too. Lots of character, I like it.

Amber pour with a light offwhite head. Aroma is barnyard, mellow dried fruit, apricot, some hay, yeasty. Mouthfeel is lightly carbonated, flavors start with musty barnyard, very herbal and earthy, some light fruitiness in the center adds a nice sweet tang and finishes very dry. Quite pleasant

750 ml bottle purchased at Central Market in Mill Creek, WA. Pours a beautiful hazy orange color with a thick white head. Aroma: Bananas, mild spice, and orange peel. Flavor: Same as the aroma, with the right balance of sweetness.

Dark amber body. Sweet aroma with some dark fruit, orange peel and clove...rather sticky. Flavors are mostly dark fruit with some slight sweetish grainy notes. Some dough flavors are also present. Overall, quite good.

This was cool-looking beer, but super fizzy. Probably the fizziest beer I’ve ever had. Not a ton of flavor either. Interesting to try, but not sure I’d buy again.

Batch 4. Lemony bandaid aroma, some damp barn blanket. Bright gold, fluffy strong white head. Very soft on the palate, persistent brett. Dry buttermilk biscuit up front, some molasses in the finish as it warms up. Fluffy cotton throughout.

The essence of vanilla surprisingly hits my nose first. Then the pleasant aroma of floral hops comes through clearly, probably from the dry-hopping. The flavor of that trademark musky malty Belgian ale flavor dominates. The flavor of hops on top of a farmhouse with some funk is unique and delicious. There is no bitterness and it is very smooth for an ABV of 8.

Poured from a cork-topped 500 ml bottle, this complex and strangely labeled saison is considerably aromatic and memorable..but I think they impressive folks in woods outside of Cooperstown took a ’everything but the kitchen sink’ approach as there is too much going on for this be a perfect beer..but interesting, nonetheless.

Bottle acquired by buddy Dave, shared by with Ben4321 and I. Nice aroma, nearly like a saison but with some hop smell. Beer is a nice hop flavor, however is very fizzy.
