COMMERCIAL DESCRIPTION
Sweet honey wine  -  Ecocert Canada certified organic product – 14% abv. Cuvée de la Diable is a top-of-the-line honey wine crafted the traditional way at the base of Montagne de la Diable and aged in oak casks for three years. The nobility of this nature protected site has inspired the Desrochers family to create a unique product where balance and elegance are revealed by managed oxygenation in oak casks.

Sample tnx to Alex. Pours clear yellow with nice lacing. Aroma is sweet honey fruity tropical fruits. Flavor is not so sweet, drinkable not cloying very much fruits and nice touch of honey.

Clear pale golden color, no head. Leaves an oily residue on the side of the glass, though no clear legs. Sweet, honey, almonds, alcohol scent. Honey, sort of tart taste. Warming alcohol. Honey (light), herbal, nutty aftertaste. Medium, a bit oily mouthfeel. Tart finish. Hints of raisin and toast.

Bottle courtesy of AdamJackson. Pours clear deep golden leaving some slick trace rather than lacing on the glass. Smell is sweet with dark honey, caramel, vanilla, charred wood and alcohol. Taste is sweet, tiny sour and boozy with honey, lemon juice, moist oak, alcohol and lemon zest. Mouthfeel is round, tiny sticky sweet, tiny tart, heavy boozy and medium bodied. Finish is sweet and tiny sour with honey, caramel, lemon juice and alcohol. Solid mead... Bit too boozy...

sample from mathieuc, thanks bro! pours clear bright gold with some textured legs. pure clover honey - clean and genuine; sweet pears and other orchard fruitiness, flowers, booze, wax, hint of coconut and vanilla - shy barreling components - yet present and giving way to honey to express itself freely. flat carbonation, medium body - oily; warming and semi-sweet floral finish. o-k.

Sample. Pours clear blond with no head. Good legs. Aroma is of sugar, honey, alcohol, spices, fruits, perfume. Taste is of alcohol, honey, medical chemicals, flowers. Palate: Full bodied. Flat. Overall: Good. That oxygenation thing + long time in barrel seems a bit much to me.

Appearance: Bright pale golden with nice legs.

Aroma: Rich honey, bee wax, vanilla, oak and hints of tropical fruits.

Taste: Moderate to medium sweetness, rich honey, vanilla, oak and light alcohol.

Palate: Medium body. Really smooth. Warming finish.

Overall: I’m quite new to mead, but this might be my favorite non-Schramms/non-fruited mead. Pure rich honey with nice oak and vanilla features. Delicious!

Pours a clear golden, still, with good legs. Nose is of honey, honeycomb and moderate alcohol. Taste is moderately sweet and lightly tart with flavors exclusively of honey. I guess this is what a straight mead should taste like, though. Body is light to medium and mouthfeel a little sticky. Alcohol shows quite a bit. Overall a good drink but a bit thin and simple to my novice mead taster’s taste. Like Julien said below, maybe a little more residual sweetness (and thus body) would have helped.

2 Oz sample. Clear very pale gold pour. Aroma is really boozy, oaky, light vanilla, very oaky. Taste is oaky, lots of oaky tannins with a lot of booze, very dry, would have liked a bit more honey sweetness. Palate is med bodied, very dry with lingering alcohol warmth. Good.
