The beer is full of hay, and doughy malt, some floral hops and herbs, a barnyard yeast, with some earthy tones as well. The adjuncts to the bouquet include a little fennel seed. The is appearance is an amazing hazy bubblestuffed colloid with a full froth top. that simmers down to a nice rocky topping of fluff. The taste is similar to a champagne with a unique effervescent flux of light sweetness, light farmhouse sour, and minute light bitterness. The feel beginning with the body is light, the texture thin, the carbonation fizzy, with an abrupt finish that flares out with alcohol.

Bottle. Pours a murky light orange with a fizzy white head. Aroma is nice, some barnyard, orange, lemon, musty. Flavor isn’t bad either, some light tartness, earthy, pepper, a bit of alcohol spice, light pineapple, light lemon, cobweb, a tad bit of malt and light dirty hop bitter in the finish. Mouth feel is light-medium body with medium fizzy carbonation. Overall, pretty tasty stuff.

Draft at Ormsby’s. Pours cloudy orange-gold with a thin white head. The aroma is awesome - perfume and citrus. The flavor starts spicy and bittersweet with citrus and grass. The finish is dry and crackery with a soft balancing grassy bitterness. The mouthfeel is crisp and refreshing with a medium body. Overall - a truly fantastic saison.

Bottle (in NZ). I like the spicy yeast on the nose, a little sweetness with a hint of banana. Nice and dry on the palate, with the flavour being pretty mellow, the malt bringing a touch of breadiness. I love a good saison!

DuPont Foret Saison 7.5ABV 750ml Corked green bottle. Date on cork is 2009 Pours a medium to light gold, hazy with decent bubbly affect. Medium head that dissipates with some light lacing on the glass. Aroma of a crappy American Lager dominates unless you really stick your nose in it. Some citrusy, peachy notes when you get past the Coors aroma. Mouthfeel is very crisp with lots of bubbles forming on the lips and tongue. Makes me want to burp. Flavor is restrained and somewhat boring. Tastes better than it smells. Dry finish with some very mild Belgian yeastiness. I can feel the alcohol, but can’t taste it (bummer). Would be a lot better in July over December. Overall, not a bad beer, but nothing too special.
