Commercial Description:
In the lambicworld you have mixed beer with winegrapes for centuries but what has never been done is to use grapes that have been infested with Nobel Rot. (Botrytis Cinerea)
Said and done! We contacted the controversial, austrian winemaker Willi Opitz.
Mr Opitz is very well known for his sweet wines and has won awards such as Late Harvest Winemaker of the Year. He has also made wines for McLaren,the department store Harrods in London as well as the wine Mr President that has been drunk in the White House both by President Clinton and President Bush. He is very innovative and has learning by doing as his motto and he seamed just enough Rock `n´Roll to go along with our new crazy idea. And just as we thought. When he gets the question he replies: " if you are going to make a new unique mixture of beer and wine, I am going to be a part of it!"
Mr Opitz has his vineyard in Burgenland near the lake Neusiedle. The mist and fog from the lake come in over the growth in the autumn mornings and make a terrific climate for the Nobel Rot.
The Botrytis forces out the water from the grapes and makes the sugars crystalize and contributes with a concentration of tastes that are just unbelievable.
The blending!
On the 19th of November of 2004 the little molded sweeties arrived to head-brewer Jean Van Roy at the Cantillon Brewery in Brussels. 35kg of Sämling and 35kg of Welschreisling. That is the same 50/50 mixture that Willi Opitz uses to make his "Beerenauslese Goldackerl".
A very sweet, slightly acidic dessert wine with different tropical fruits in both nose and palete. We macerated the grapes in a secondfill cognac barrel using a 2-year old, soft lambic with strong wine caracter.
The fermentation begun after a few weeks and went on for almost 3 months and created a wonderful, dry, extremely fruity botrytis lambic with lots of raisin and Cognac in the nose!!!
Bottling according to the Champagne Method!!
On februari the 8th the Botrytis Lambic was bottled. But still one more unique action was to be taken.
When making a "Gueuze" the blender adds a bit of young lambic to his old when bottling. The young lambic still has fermentable sugars and will create a secondary fermentation in the bottle. This method was created by the Benedectine monks in the 1530 ´s and is known to the world as "The Champagne Method".
In our Botrytis Lambic we have added the Wine "Beerenauslese Goldackerl" in the bottles both for fermentable sugars as well as the extra flavour. That of course will name our beer Goldackerl Gueuze.

Shared with kkearn at Akkurat. As he noted, we were lucky enough to try this along side the Goldackerl wine. The beer poured a golden body with a slight haze. Nose was earthy with wood notes and a slight musty aroma as well. The taste was sharp, acid but there were also some smooth fruit, grape notes in the taste as well. You get some alcohol notes and there is a bit of a medicinal quality as well. Overall this is a very interesting beer.

Bottle @ Akkurat. Lots of stuff going on in the aroma. Funky apple and a certain tartness. The taste is very complex. Bourbon sweetness, the fruitiness of a cider and the vinous bitterness from grapes. Not as sour as many other Cantillon beers.

Shared a bottle at Akkurat together with finol and hirigalzkar. The color was gold-like, almost no head to talk about. The aroma was fantastic! Not too easy to describe. Vibes of wine, green apples, citrus, cellar. Taste was perhaps not quite as wonderful as the aroma but still very, very good! Not as sour as a regular Cantillon Gueuze, this was clearly a bit milder. My first spontaneous thought when I tasted the beer was that it tasted a little like a swimming pool. Somewhat bizarre, but so be it. Sweet tones. Citrus, apples, some wood also. Complex but still easy to drink. The body felt heavy compared to an ordinary Gueuze. Initially, I felt none of the alcohol, but then it did come with a pleasant warming effect. A great beer!

Bottle at Akkurat. Looks like apple juice with almost no head. Aroma of apples, root cellar and petrol. Sour, burbon and seaweed. Tastes a bit like a crossover between a beer, wine, cider and whiskey. Smoother and sweeter mouthfeel than expected.

75cL bottle, at Akkurat. 2005 vintage. Sampled alongside the Goldackerl wine used for the bottle fermentation
Pours golden-straw color with a modest sized white head. Aroma is very unique, with sweet white grape (similar to the wine aroma, but not as sweet), brett, melon grain, earth, and lemon. Green apple and perfume aromas are more evident as the beer warms. Flavor is a bit more acidic than the aroma suggests, with lemon, melon, earth, leather, pepper, and sweet white grape, and mild spice. Finish is a bit musty, with white wine notes and a fair amount of lactic acid. This wasn’t the typical Cantillon Lambic, but I enjoyed it immensely. It was interesting to try it alongside the wine; it maintained a fair amount of the wine character. Awesome stuff! Wine is syrupy and sweet. Retains some of the flavor.

Bottle 75cl. [ Vintage 2005 ].
Unclear light to medium yellow orange color with a average to large, frothy, good lacing, mostly diminishing, off-white head. Aroma is grape, citrus, barnyard, tart - sour, figs ! alcohol, chilli peppery. Flavor is moderate sweet, moderate to light heavy acetic and heavy grape shell sour with a long long duration, and a dry dry sour sour finish. Body is light to medium, texture is watery, carbonation is flat. It is burning on your lips - alcoholc or like chillip peppery. [250908]

Hazy dark blond color; small ring of foam. The aroma is a perfect mix of aged Lambic and Sauternes-like wine; light rubber; it gets more winey and even cheesy if possible; and much later, light oxidized wine. Good body strength, almost round body, as far as possible for a Gueuze, woody astringency and tannins, medium sourness, an impression of grapefruit. Long citrusy sourness in the final, and increasing astringency. It takes time before feeling some alcohol warmth.

Cloudy golden with tiny white head. Sour aroma with deep berry and barnyardy notes. Sour flavour with sweet berries nd barnyard notes. Finishes sour.
