Commercial Description:
Our Pale is an all grain, close fermented, lightly hopped, handcrafted ale. We steep and sparge the freshly milled grain, in a slow and deliberate process using both a mash tun and a lauter tun, before pumping it over to our kettle. Once in the kettle, we bring it slowly to a boil and add hops in incremental stages, for bittering, aroma and flavor. While in the kettle, the wort must be carefully attended too as it threatens to boil over. After the boil is complete and all of the hops have been added, the beer is slowly cooled through a water chilled cooler and brought to a perfect temperature for pitching our yeast. After a period in closed fermentation, the ale is passed through a filter into a brightening tank where it awaits packaging. Nothing in our brewery is automated, ensuring that each step in the brewing process is hand crafted. We use a hand selected blend of organic malts with a primary base of Briess organic 2-row pale. The Briess 2-row malt is known for it's smooth and mild qualities. We add top-secret specialty malts to give the ale robust body, rich colour, and foam retention. The results are clear. Hops selecting in our recipe formulation is difficult since there are so many amazing organic hops to choose from. Again, we use a top-secret blend of organic whole hops in our pale ale but we favor an aromatic beer so we use an age old method of 'dry-hopping' - adding a final 'tea-bag' of organic Kent Goldings in the brightening stage. Organic Kent Goldings hops are grown in Belgium from the original rootstock and are known to be one of the finest hops in the world.

Very pale gold with a rocky white head. Flavor is big on citrus and yeast, a bit of crystal sweetness. It’s refreshing but not sure what it wants to be, almost a bit of belgian pale to it, but not enough to really work as a belgian. Far too citrusy, lemony for a pale ale. Hmmmm, overall not sure what to make of it.

Santa Cruz, the first place I ever bought the silly shrooms, nice little place in my heart but why did all those mountains keep rolling. But about the beer. Pours a light amber, little head. Smell, not much, but where this beer shines is the mouthfeel, big bready yeasty mouthfeel, actually compared to there other beers, very good. Mouthfeel for a light pale lager is big and welcoming. This is a very drinkable beer and highly recommended.

Getting a big buttery flavor. Very unlike any pale I have had and really don’t know what to think of this. It is not terrible but so off style I am flumoxed. Maybe it is the organic nature of this beer I don’t know. Weird off aroma as well. Flavor has some fruitiness and there is a decent body to this thing but I don’t think I would grab this one again.

On tap. Hazy golden with an off-white lacing head. Aroma of malt and a little fruit. Medium body, soft mouthfeel, unpleasant buttery notes with a light fruitiness. Dry bitterness in the finish. 090709

From tap at the brewpub. Pours hazy orange with a small white head. Butterish and malty aroma. Sweet flavoured, distinct butterish and yet also hops fruity. Ends butterish malty and light bitter, lasting sweet impression.

Bomber poured a clear yellow with a large lasting white head. Aromas of bread, light straw and light spice. Palate was light bodied and crisp with a dry finish. Flavors of straw, bread and a hint of spice with a crisp dry finish.

Draft at the brewery. OK, so here’s the deal with every beer I had here: buttery. Adjust the color and basic flavor component to match the beer otherwise, and that pretty much wraps it up. This one was extremely grainy for the style; I can’t get past the impression that I’m drinking fermented butter. (#3585, June 2009)

Bomber. This was a gift from a friend and for that I am grateful. The beer however, while somewhat interesting, was hard to finish. Very metallic flavor and a rough aftertaste.

Golden pour with small white head. Semi skunky aroma with slight citrus. Some yeast and spices in the flavor, though really uninspiring. So so beer at best.
