Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Pours a deep clear brown with a lasting tan head. Spicy stout like roasty aroma. Smooth roasty flavor, with hints of fruit and spice. Very drinkable and enjoyable. Well made.

aroma is fruity, lots of berries, and ripe fruit. flavour is much the same, but its a touch sour, and the sweetness is a tad bit cloying. Fnish is sweet. quite an interesting brew.

All the signs of a porter: dark brown/black color, roasted chocolate malt aromas and flavor, medium body. All this with addition of dark fruits in the aroma and flavor and some acidity in the finish.

Some stout like qualities: coffeeish bite. I didn’t taste that much fruit though, a good beer, but not as unique as I would have hoped for the money I paid.

The only drinkable one of this bunch of traditional ales. Pours a dark reddish purple color with a foamy light brown head that lightens as it is exposed to air. Nice lacing. Nose is roasted dark malt and dark jammy berries which I suspect are the elder berries. Mouthfeel is supple and the taste is roasted coffee and more berries. Not bad.

Black w/ grayish head. Light fruit on the nose w/ coffee & molasses. Firm, moderately chewy body. Flavour is roasted (coffee) & sweet (molasses, prunes, date) w/ also a light fruitiness (elderberries I suppose).

I don’t know what an elderberry is. However, for a dark beer, with fruit, this is pretty nice. Not something I’d buy, but it’s by no means a drain pour. Cool, funky, and different.

330 ml bottle. Dark brown, almost black. Thick light brown coloured head that clings to the glass. Rich, slightly sharp, roasted aroma. Not your typical stout, but there is also a vegetable/fruity character. Roasted flavours at first, but mellows into something more soft and drying. Rich flavours with quite a bit of sweet malts. Quite bitter, particularly in the finish.
