COMMERCIAL DESCRIPTION
A blend of red wine barrel aged saison (~50%) and biére de garde (~30%) from our mixed fermentation projects, and fresh Belgian witbier (~20%). Funk, spice and grain flavours are softened by fruity, floral Brett notes. A complex beer ideal for ageing.

UPDATED: MAY 30, 2023 Bottled. Hazy yellowish golden colour with a small white head. Aroma is slightly spicy, some wine notes, wood, mild farmyard, some yeast as well as citrus. Flavour is bready, some citrus, mild acidic notes, sour wood as well as some slight herbal tones. Quite mouthdrying.

Minimally woody, oaky, yeasty spicy and minimally fruity aroma, a herbal touch as well, notes of mustard seed, a touch of dill, hints of apricot, dried apricot. Taste is dry, yeasty fruity and slightly yeasty spicy, subtle sweetness, a minimally woody, oaky touch, notes of apricot, dried apricot, a touch of white pepper and mustard seed. Very homogeneous, harmonious, consistent.
