Commercial Description:
The recipe for this beer goes right back to monastery traditions. The complex triple mash process using four types of malt gives the dark “doppelbock” its characteristic malty dominance and its close to black color. The storage time of 16 weeks produces a pronounced, well-rounded taste. Despite a high original wort content, the sweetness that is frequently present with doppelbocks can scarcely be detected. The first taste is of mild fullness with an accompanying coffee tone, which becomes more dominant with the aftertaste. Between November and January you can allow yourself to be completely won over by the excellent quality of the Winterbock.

500 ml bottle. Deep dark ruby brown colour, thin light brown head. Sweetish roasted malty aroma, with some liquorice and dark fruits. The flavour is also roasted, malty, bread-like, with a hint of coffee and a warm bitter finish. Full-bodied, smooth carbonation.

Very dark ruby, almost black beer. Medium beige head. The aroma is strong and malty. Bready sweetness and salty licorice are well balanced. Dates and raisins in the finisih, also some ripe bananas. Mellow roastedness develop towards delicious chocolate in the finish. Some herbal hops in the finish too. The flavor is sweet, and it has lots of bready malty. Light bitterness and sourness of chocolate beans in the finish. Full bodied, low carbonated and oily palate.

500ml bottle. Light brown head. Deep dark brown colour, almost opaque. Aromas of roasted caramel malts, banana, raisins, toffee. Somewhat oily palate, medium carbonation. Flavor is sweet banana, wheat, roasted malts, sourish end. A little bit too sweet for my liking.

Deep copper colour, thick creamy beige head. Aroma is malty and sweet, dark bread, dark fruit and spices. Flavour is full of bread, ending in a nice bitterness, unfortunately a metallic aftertaste lingers in the background. Mouthfeel is smooth but a bit flat. Good but not living up to the hype.

(Bottle) Pours dark mahogany with a pale nougat coloured head. The aroma is medium to heavily malty with tones of dark, juicy bread, burned sugar, nuts, hay and syrup alongside some dried fruitiness. Earthy and herbal hops. Maybe a whisper of chocolate/coffee and liquorice. Typical Ayinger malt profile. The flavour is light to medium sweet and light to medium bitter with notes of dark bread, dried fruits, nuts, Coca Cola, coffee, anise and herbal hops. The mouthfeel is creamy and round with lively carbonation. The finish is quite empty with a slight metallic, coffee twist. Medium bodied.

0.5 L botttle from Systembolaget, Charlottenberg as Ayinger Winter Bock. Fully diminishing mediumsized, dense, light brown head. Brilliant, dark ruby body. Strong, nutty, almost cheesy malt aroma. Dark caramelly, with a whiff of tinned dark fruits. Full malt body. Sweet. A refined malty and fruity sweetness. Toasted, light bready, with suggestions of mild spices and dried, dark fruits. Some faint spicy hops underneth. Thick, yet soft mouthfeel. Big, lingering malt finish, with fruity and roasted notes. A malt bomb, very nice indeed.
