Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Draft: Beautiful dense white foam leaves behind magnificent cobweb lacework. Crystal clear auburn liquid. Dynamite aroma of bubblegum, maraschino cherry, wood, and a faint sign of mustiness. Trademark De Dolle feel: Superbly slick and soft. Borderline complex flavors of sugar, rich sweet cherries, which nearly resemble cough syrup, and a touch of bread in the finish. Too much emphasis on the cough syrup flavors, and not enough cleanliness. Also, not an easy drinker, but a fine after dinner sipper, and that’s about it.

Tan colour. Thin head. Sweet marmalade aroma, quite perfumey too. Thick, sticky taste. Bittersweet orangey flavours. Quite oily texture. Very warming and has a dry finish.

0,33 l bottle, vintage 2009, bought at PreZBF, Belgium.
Poured hazy golden with a realy nice, creamy, after a while lacing delicious white head. Aroma is a concentrated caramel and liqueric one with a lot of spicies like vanilla and clove, some citrusses and raisins, honey.. The beer has an oily texture, a spicey character because the feeling of clove, cinnamon and vanilla. Fruity, malt and caramel based flavor with apricot, figs and honey. Harsh, flowery bitter in the aftertaste. Because of the high abv the sweet liqueric taste leads but not rules the taste. Balanced brew.

Bottle. Thanks to fata2683 for the trade! Pours hazy orange-amber, thick persistent white head, nice lacing. Nose is lovely and bready, stale hops, acidity, sweet cake, berries, dates, very complex and rich. Palate is full, yeasty, and mouthfilling, with more bread, tartness, fruit, and great bitterness throughout. If this is a Christmas Beer, this is my new favorite for the style.

Bottle. Pours a hazy orange/golden beer with a big white head. The aroma is fruit, yeast, spices and some acidity. The flavor is sweet and fruit. The palate is with alcoholwarmth. Overall a good and complex beer.

Muddy brownish colour with creamy head who stays.Aroma of yeast and apricot nice fruity whit note of caramel and herbs,good full body and flavor of sugar and vanilla.

Bottle thanks to cavie. Pours a cloudy amber with sediment, has a lasting white head. Aroma has some barnyard, fruit, grain, light citrus and musty. Flavor is sweet, fruity, some barnyard, spicy, citrus, a little musty and some horse blanket. Mouth feel is heavy body with lively carbonation that kinda lightens the heavy body. Overall, very tasty brew, it is warming as well. I very much enjoyed!

2008 bottle thanks to cavie. poured hazy yellow with sediment and white head. aroma was cinnamon, clove, banana, and lemon zest. flavor was lemon, cinnamon, and other spices with alcohol and a rather heavy body.
