Aroma of oranges, spices and citrus. The taste is of orange peels, citrus and pepper !! The mouthfeel is spritzy and has some good carbonation. Not quite as carbonated as usual Fantome, the head isn’t enormous like I’ve come to expect. Aroma is very strongly funky. Huge brett presence, lemon, funk, horse, hay, citrusy, hops?. Taste is strawberry, intense fruitiness, with a nice soft finish. This is very different from the other Fantomes I’ve had. Much fruitier and less dry. This one has a silky, even creamy texture, which I like just not what I was expecting. This is very good, as usual with this brewery though I think I prefer the Printemps and Hiver. Poured from 750 ml bottle a light hazy orange, forming a huge white craggley foamy head. Aroma of barnyard funk goodness and spices. Flavour was of malty hopped citrus tones with spices, yeast and coriander. Exceptionally smooth, despite its sour funkiness, which adds to the lovely character of this beer. Beer has gold aura from within, orangish haze. white proper foam. Flavor is spiced, light sweetness, slight skronk-funk, seems to be a characteristic of some of these saisons, or it could also be the green bottle. A little "meh." Does not tate like 8% at all but feels like it. Some fruitiness, suspect I either don’t like this style/brewer style as much as others, or have bad luck with these green bottles. The flavour is grainy, wheaty and dry with a pronounced mown grass hop tang and more apple/pear esters. The finish is increasingly dry and wheaty with more herbal hops showing. | 4.3 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 9/10 | 4/5 | 18/20 | Apr 6, 2007 Seriously sealed with a crown cap, and a flush cork, this green bomber yielded a pale straw colored beer that was very cloudy with suspended yeast. The head was two finger thick and foamy. The aroma was hearty, yeasty, and rustic. The taste was drier than the middle of the Sahara Desert. This moderately spiced farmhouse ale was tart, floral, and noticeably bitter. A little taste of vanilla, followed by an oak dominated finish. Went very well with some spent grain bread (from a local brewpub) dipped in Fleur de Sel butter as well as some Beemster cheese. I felt that this Saison was a little less malty and funkier than the standard bearer of the style Saison DuPont (although it does have more ABV). Nonetheless, this was a hearty and refreshing drink, and I found it it be well deserving of the accolades it has gotten.
