COMMERCIAL DESCRIPTION
This beer is our version of a very unique Belgian beer style brewed only in the Lambic region outside Brussels.

We brewed this beer over 5 years ago. The first step was adding wild yeast. We did this at the warehouse in an oak barrel. We pitched wild yeast and one case of cherry lambic I brewed in San Francisco in 1992. This added enough wild yeast to start fermentation. (This beer was brewed totally off-site to make sure we did not infect our on-site beers).

Fermentation started slowly, after about 6 months it was going strong. We allowed the beer to ferment in the barrel for almost 3 years. We then moved to another barrel and added Raspberries. Another fermentation took place. This very rare and special beer is 5 years old. Strong notes of lactic, bitter sour aroma will come through with a very tart flavor balanced slightly by the fruit.

This beer was awarded a bronze medal in the wild beer category at the Festival of Barrel Aged Beers last month. We will not be filling any growlers of this unique framboise although, we will release about 150 corked bottles later this winter.

Sample @ Northern Lights. Reddish pour with a pink head. Nose is quite expressive. Lovely vivid raspberry meat. Mild funk. Similar flavor. Juicy, jammy and refreshing. Light acidic bite. Wonderful.

Draft at Northern Lights. Hazy to cloudy reddish golden color, off white head. Nice aroma of overripe raspberries, light dust. Taste is funky and lightly sour berries. Delicious.

March 12, 2016 - on tap at Rare Beer Fest held in the Minnesota History Center. Reddish pour with big head. Raspberries were very strong in the aroma and taste. My favorite Fitgers beer of the night.

I have wanted to try this for a while but never thought I could, just b/c Fitgers is in the middle of nowhere. Then, for some reason, PrufRock happens to have this bottle. He shared it at a tasting. Bottle 103/204, not sure what year. Small head. Orange gold color body. Lightly acidic, breezy grapefruit. Some jammy fruit. Lightly tart&drying;. Not sweet.

Bottle 103 of 206. Thanks to Levi for this. Opens without much of a pop, but pours with nice ring of bubbles. Hazy gold. Tart, fruity, oaky; light cereal. Well-balanced. Medium body, slick texture. I’d happily drink another.

Orange pour with a white head. The aroma has some nice raspberry notes as well as some toffee and brown sugar. The flavor is very similar. I get some nice juicy raspberry character as well as some light tartness and cherry notes. There is also some light toffee. Medium mouthfeel and medium carbonation.

750 ml bottle from goryshkewych- thanks again, George! Bottle 358/488 from the more recent batch. Pours a semi-cloudy pinkish peach color with a small ring for a head. Notes of raspberry, plenty of funk, lactic acid, sour candy, and floral notes. Light-medium bodied, with an acidic mouthfeel and medium carbonation. Awesome raspberry sour. Really worked for me.
