Drink it along an apple pie or a fruit salad. krisbierjaeger (837), dolores, Colorado, USA Apr 18, 2005 i had unibroue’s ephemere the other night and thought it’d be fun to taste this one while the apple-beer experience was fresh on my mind. i was wrong--it really wasn’t fun at all. it looks like a wit with it’s moth-soft powdery pale yellow under a froth of pearly foam, and it’s long icycles of lace. perfumy apple sap aroma, green apple jelly, possibly a note of dough-- but the apple is screaming so loud i wished for the olfactory equivalent of earplugs. a creamy yeasty feel, but so dismayingly sweet i believe that a honey badger would find it cloying. pure apple syrup with a shake of pie spices. would probably be fatal to a hyper-active nine year old. what were they thinking? as an imperial IPA is a hop bomb, this is imperial sugar bomb and a royal disaster. A wheat beer with apple juice. Once you get past the shock of the sweet you can detect subtle wheat flavours and spices. But it’s too little too late for me - I like the intense sweet stuff to be cut through with some acidity - this is unrelieved sweetness. And there’s something slightly artificial and chemical about it that is mildly disturbing. As much as I love fun, sweet beers, this one doesn’t do it for me at all.
