buttermilk and beer marinated

I made this turkey for christm
1 15lb turkey
2L buttermilk
2 12oz bottles of beer
1/4 cup sugar
1/4 cup salt
5 cloves garlic, chopped
3 shallots, diced
1 bunch each of thyme, rosemary and sage, chopped
5 bay leaves
2 tbsp cracked black peppercorns
2 tbsp tobasco
oil
salt and pepper to taste
1. place beer, sugar, salt, garlic, shallots, herbs, bay leaves, pepper, and tobasco in a pot and heat just until it comes to a boil, then remove from the heat and allow to cool
2. whisk together buttermilk and beer mixture in a large bowl until evenly mixed
3. pour mixture over turkey and refridgerate for at least 24 hours
4. preheat oven to 450 F
5. remove turkey from the marinade and pat dry
6. place turkey in roasting pan, rub with oil and season liberally with salt and pepper
7. turn the oven down to 350 and roast the turkey 20 minutes per pound, or until the internal temperature reaches 160 F
8. remove turkey from the oven and cover loosely with tin foil, let it rest for 20-30 minutes until internal temperature rises to 170 F
9. carve and serve
