1. Dough in with 3.25 gallons at 170° 2. Let it sit for an hour at 150° 3. If you miss the temperature, boil a couple decoctions to get it back up. 4. Drain after the hour or so is up. 5. Add 3.25 more gallons of water at 180°. 6. Stir and wait 10 minutes. 7. Drain to get 6.5 gallons of wort 8. Boil for 90 minutes.
