I mashed at 153F for 60 minutes.
Starting gravity is 1.056 assuming 75% efficiency. The hop schedule is designed using pellet hops and should put you at about 40 IBUs. Adjust amounts upwards if using whole hops. I usually use WLP002 or WLP005 but if those are too unattenuative for your tastes I’d bet WLP007 would be good.
