1. Make a yeast starter!
2. Strike with 140F water, rest 20 minutes.
3. Decoct 8qt thick mash, boil for 10 minutes, return.
4. Add enough 170F water to achieve 154F, rest for 25min.
6. Recirculate wort until clear and sparge with enough water to collect 6.5 gallons of wort.
7. Add 1oz hops, boil for 60 minutes.
8. Add 1oz hops, boil for 30 minutes.
9. Chill to 70F and pitch yeast.
10. Ferment at 50-54F for 2 weeks, lager at 40F for 2 weeks
(minimum).
