Wildflower Almost Strong Ale

This Brew is an almost strong Belgian ale. The wildflower honey and banana create a nice taste. The California Ale yeast is the way to go for a crisp finish yet high in ABV. The aroma is incredible smelling and makes your mouth water.
3 lbs. Gold Dry (DME), 3.3 lbs. Amber (LME), 1 lb. Wheat Malt, 8 oz. Crystal 40L (Belgian), 2 lbs. Wildflower Honey, 2 oz. Cascade hops (boiling), 3/4 oz. Saaz Hops (finishing), 1/2 tbs. Ginger, 1 1/2 Whole Bananas, 1 tbs. Irish Moss, White Labs California Ale Yeast
5 Gallon Batch 1. Mash Wheat malt and Crystal 40L for 45 minutes at 155-165 degrees Fahrenheit bringing to boil. 2. Add Amber LME, Honey, Gold dry DME, and 1.5 oz. Cascade hops boiling for 60 minutes. 3. At 30 minutes of boiling add .5 oz Cascade hops, full banana, and ginger 4. At 45 minutes of boiling add 3/4 oz. of Saaz hops and half a banana finishing with 1 tbs. Irish Moss. Estimated OG 1.045-1.060, Estimated FG 1.006-1.012, ABV 6.5-7.2%
