This is a stronger pale ale, if you will, that we brewed for our wedding on 11/17 (hence the name). Very hop-forward, mildly bitter; great balance.

ELEVEN ONE SEVEN ALE Batch size: 10 gallons Est. OG: 1.061 Est. FG: 1.007 Est. ABV: 7.0% Est. IBU: 33 Est. SRM: 12.6° L --------------- 25 lb. Pilsen 1 lb. C80 1 lb. C120 --------------- 1.0 oz. Cascade (60 min.) 2.0 oz. Cascade (30 min.) 0.5 oz. Centennial (20 min.) 0.5 oz. Cascade (10 min.) 1.0 oz. Citra (10 min.) 1.0 oz. Citra (flameout) --------------- 1.25 oz. Columbus (dry-hop: 14 days) --------------- White Labs WLP001 California Ale Yeast

Mash @ 151°f for 1 hour, sparge as usual. 60 min. boil (add Whirfloc-T or Irish moss to boil for clarity). Ferment 1 week primary, 3 weeks secondary at 68°f.
