This is an all grain recipe wi
10 lbs. U.S. 2 row

10 oz. U.S. 40L crystal

8 oz. light Munich

4 oz. Special Roast


1 oz. Galena 12% AAU for 60 min.

1 oz. Amarrillo 7.1% AAU for 15 min.

3/4 tsp Irish Moss for 10 min.

1 oz Amarrillo for 3 min.

1/2 oz Amarrillo dry hop

White Labs 001 or Wyeast 1056.
Dough-in @ 110 for 15 min. with 8 qts H2O.

Add boiling H2O until the temp of the mash is 145. Hold for 35 min. It should be about 7-8 qts. depending on elevation.

The next step is decoction up to 158 for 25 min. It will probably take about 6 of the 16 qts. I boiled it for 5 min.

Mash out @ 165 for 15 min. again using decoction, about 6 qts. boiled for 5 min.

*Or just skip all this shit and do a single infusion @ 152 for 75 min. and a mash out @ 165 for 15 min. Note that you will probably lose some efficiency so you might make some adjustments for that.?!.?

Batch Sparge W/ 3 1/2 qts @ 170 to get 7 gallons.

Do a 90 min. boil.

Pitch a pretty big starter.
