Steep 0.5 lb Cara Pils malt and 4 oz. crystal malt together in a hop sock in 0.5 gallon 150° filtered water for 20 minutes. Occasionally mash the hop sock with masher to release liquor.|
Pour the 0.5 gallon of malted water from step 1 in brew pot. Placed strainer over brew pot and add hop sock to strainer. Pour 0.5 gallon 150° water over hop sock to sparge liquor.
Add 0.5 filtered tap water to brew pot to bring total volume of liquid in brew pot to 1.5 gallons.
Bring to a boil.
Upon boiling, remove from heat and add 8.6 lbs light LME (light malt extract) and 1 oz. Nugget hops in a hop sock.
Put back on burner and boil for 45 minutes, stirring occasionally.
45 minutes into boil, add 1 Whirlfloc Tablet and 0.5 oz Perle hops in a hop sock. Boil 14 minutes.
59 minutes into boil, add 1 oz. Cascade hops in a hop sock. Boil for one minute.
60 minutes into boil, remove brew pot from burner and put in an ice bath. Chill wort to 70° F.
Remove all hop socks and throw them away.
Add 2.5 gallons of filtered 70° F water to wort, bringing it up to 5 gallons total.
Pour 1/3rd of the wort into a sanitized carboy.
Pitch 1 vial of White Labs California Ale (WLP001) into carboy.
Pour remaining wort into carboy.
Aerate carboy by shaking vigorously for 2 minutes.
Ferment in the primary fermenter (at 68°-72°) until the air lock burps approximately once every minute.
Siphon into secondary ferementer.
Dry hop with 1 oz. of Cascade hops.
Bottle with 1 ¼ CUP Extra light Munton’s DME.
