Commercial Description:
In the 1930'ties archaeologist found some 3800 year old clay tablets, which described how a fermented beverage was brewed by the Sumerians.
The poem in the clay tablets was called "The Hymn to Ninkasi". When we brewed the beer we baked some bappir, which is a dried bread made of barley, honey and dates. The bread was mashed with barley malt.
It does not contain hops and it is not boiled either. A mixture of wine yeast, wild yeast and acid producing bacteria are responsible for the fermentation. For more information see http://www.olfabrikken.dk/ninkasi

Cask at Ølbaren. Reddish amber, cloudy and almost no head. Sourish aroma with notes of apples and malt. Flat with a sour flavour of apples. A great experiment, but not a great beer.

Cloudy amber, orange colour with a small off white head. Malty, light acidic aroma with notes of vegetable. Malty, light sweet flavor with a smoky note and a vegetable and acidic finish.

Hand bottled from cask at Ølbaren and tasted shortly after.
Unclear dark orange colored with absolutely no head. Extreme aroma, dominating sour and herby with obvious smokey tones. Flavor is just as odd and different as the aroma, acidid and smokey, but actually with some balance that makes it slip down more easily. Herbs and spices and a sweetish fruity tone in the background. I honestly can’t say I enjoyed this very much, but it’s a funny and different beer experience that I’m glad to have tried!

Cask at Ølbaren. Hazy orange coloured with a small off white head. Acidic aroma of fruits and spices. Acidic flavour of, fruits and spices with notes of vegetables. A bit watery. Interesting experiment.

CASK at Ølbaren, and Thanx to Christian SA. Dark orange colour with no head. Light sweet sour fruity, light smoked aroma and taste. Medium body with a light acid, sour, dry finish.
