Chicagoans like hoppy beers, so we obliged by brewing a mean Double IPA. Then we asked artist Joey Potts to design a label of equal intensity. Generously hopped with Falconers Flight, Zythos, and Cascade, Sinister is brimming with juicy, tropical flavors of mango and pineapple. Donít expect back rubs and mixtabs from this beer-- Sinister wonít even remember your first name.

Tap sample. Poured cloudy orange copper color with an average frothy off-white head that was mostly lasting with good lacing. Moderate to heavy complex citrus hop and earthy malt aroma. Medium to full body with slick texture and soft carbonation. Medium to heavy smooth bittersweet flavor with a medium to heavy bittersweet finish of moderate to long duration. This is a solid beer and exceeded my expectations.

Honey pour with a nice head that leaves good lacing. The smell is hoppy citrus and tropical with some butterscotch malt. Flavor is citrusy, boozy, slightly butterscotchy malt. Medium bitterness. The malt flavors detract from it but overall solid.

Draft. Orange malt and grapefruit peel aroma. Golden yellow with moderate head. Sweet tangy tangerine malt and moderately bitter orange peel/quinine flavor. Nice balance.

Bottle shared by Sarah, thanks! Pours a clear amber with a tan head that dissipates to the edges. Aroma has a nice combination of pine and resin with a hint onion and sweet grain. Flavor has a nice combination of pine and resin with some onion that is mild.

Bottle. Pours a cloudy orange with small off white head leaving sticky lacing. The aroma is tropical fruit and spruce. Medium mouth with nice juicy hop, light bitterness, very nice.

Pour on tap at the brewery, hazy golden-orange pour with white head, aroma brought notes of mango, orange, citrus, some slight pine, dank notes into a bit of biscuit. Taste was a mix of orange, grapefruit, some tropical fruits into a bit of spice, pine, dank notes, hints of caramel, finishing fairly bitter.

Draft to snifter at 18th Street. Looks good; a cloudy orange with foamy off-white head that dissipates slowly. Smells hoppy and equally malty. Tastes like it smells with some discernible citrus and tropical fruit. Fuller-bodied. Good beer.

22. Pours a hazy rubied medium amber with a dense and creamy white head that lasts. Lots of eggy lace. Sweet malty nose, caramelly, showing some dank here and there, a little redolently herbal. Creamy medium body with soft carb. Toasty caramel, rich garlicky spicy notes, some brown bread, some earthiness, really an interesting combination that stands out as being unlike other DIPAs. Nice stuff. On paper this sounds like a weird mishmash of uncomplementary hops, but they work together in appealing ways.

22 oz bottle from Binnys South Loop (Chicago, IL). Finally got around to popping this on this Friday "Happy Hour" time. Pours a nice amber golden hue, touch of darkness, mellow orange amber glow on the edges. Decent haziness, frothy whitish head laces as a mellow layer, sticks around as a soapy frothy head. Aromas are gentle tropical fruit, oranges and lemons. Some florals, gentle gumball, faint peach and tropical mango. Some bready and gentle carmelized malts, a bit toasty. Some grapefruit, firmer fruity hop feel. Initial is medium bodied, good soapy bitter front end gives some florals, grapefruit, and bitter earthy hops. A bit resiny, dry and bitter firm hopping strikes the palate up front. A touch toasty, medium bodied perhaps a bit lighter. Nicer fruit flavors, bready and biscuity malts in the middle show some gentle body that support. Dry and bitter florals, firmer hopping that shows some complexity sticks around. Backend is dry, bitter, some bready and gentle sweeter caramel malt body gives just a bit more support. Tropical fruit, gumball, and that Falconers Flight element really give some nice fruity play. Gentle soap, firmer florals and grass, bitter hops linger on. A bit toasty, firmer hops. This is pretty nice. Itís not explosive, but I think itís done right. Smaller malt bill that shows a bit of body but doesnít get oppressive. Nice hop bouquet that works well, provides fruit and some complexity and not just the "Here, take all these hops. Be happy with this abrasive bitter bomb" that you can see in a lot of offerings on the market and just stark bitter big hops as opposed to the nice flavor profile you get here. Very nice. Nose could use a bit more life on the nose, but the beer looks great, laces well, and tastes good. Nice. Finish is more woody, earthy bitterness as we settle in.

Bomber bottle and served in my PW snifter: Pours a clean coppery hue with a beautiful lasting head and lace. The aroma has nice tropical, citrus, and fleshy fruit esters (mango, pineapple, peach, apricot) along with a bit of resiny and dank esters. The taste is fruity as expected along with a bit of astringency and metallic notes. Very mild bready and caramel malt notes. This is quite dry almost to the point of perhaps being over-attenuated. The mouth feel is sharp and sprite with a hint of alcohol bite and the aforementioned bone dry finish. I like this and would really dug it if it wasnít quite so dried out. Still that is a minor quibble.
