Commercial Description:
Blend of 1, 2 and 3 year old lambic. Fermented and lagered in oak vessels. In this bottle the young yeast is brought to sleep ('ingedoesjeld') so the original lambic flavors are preserved. This beer has no head, just like lambic. The lambic is brewed with 60% barley, 40% wheat, last years hop

Bottle, shared by dickinsonbeer. Color is somewhere between straw yellow and gold. Aroma is sour and leathery, citrusy. The flavor is the same, very reminiscent of the oude geuze, but a little less sour overall.

Bottle at Paul’s Hoboken Gathering:Pours a headless hazy golden. Funked nose with some damp basement, sharp cheese and lemon juice acidity. Slick body with a tart flavor. Cleansing lemon acidity, vinegar and a bone dry finish. A solid Lambic, easy drinking.

Bottle Hazy, amber/golden body, with a good head, but this disappears quickly. Aroma of citrus, orange, yeast, dust, ... The aroma is not that great. Heavily sour, lightly bitter flavour. This is very great beer, quite balanced and has a nice complexity. It lacks indeed some carbonation in order to be a gueuze, but still it remains nice.

12.7oz bottle labeled Bottle Date Feb 23, 2006. Poured a deeper and hazy golden color with just a trace of a head. Aromas of wood, funkiness, citrus, green apples, and yeast. Tastes of funkiness, green apple sourness, with some vanilla.

Bottle, shared with Axilla at a music festival. Poured cloudy gold in color with no head. Aroma of mild citrus and some yeasty funk. Tastes of acidic citrus, slightly tart, typical funky yeast, grass, and a little dusty. I love lambics, but overall this didn’t do much for me. I’d like to try this again.

Bottle (Feb 06 bottling). No head. Body is hazy medium to dark yellow, bottle conditioned. Aroma is lightly malty (toasted grain), moderately yeasty (barnyard, horseblanket, cobwebs), with notes of sour apple and lemon peel. Flavor is lightly to moderately sweet, moderately to heavily acidic. Finish is lightly sweet, moderately to heavily acidic, lightly bitter. Medium body, watery texture, no carbonation, lightly to moderately astringent. I won’t lie...I prefer some carbonation in beer...it’s part of what makes beer beer, after all. It helps transport the aroma to your nostrils, looks nice, and it provides a lively, velvety/fluffy mouthfeel. So this sort of lambic is at a disadvantage from the start. That said, this is still a delicious lambic...nearly perfect balance as with virtually everything from 3F (clean, and very sour but not harshly so), and an enticing, if more subtle than usual, aroma. Great, but yeah...I still found myself longing for some carbonation despite knowing this is how it’s supposed to be.

375ml bottle. Slightly hazy, deep golden colour with no head. Displayed a musty grapefruit, barnyard and yeast aroma. Easy and refreshing drinking with some acetic dryness, citrus, spice and apricots. Excellent.

Cloudy golden orange, moderate to small head with some lacing and retention. Aroma is barnyard action, some vanilla and wood, tart and acidic of course, funk. Medium bodied, acidic with a light sweetness. Good stuff, if only it was a fraction of the cost.
