Commercial Description:
Blend of 1, 2 and 3 year old lambic. Fermented and lagered in oak vessels. In this bottle the young yeast is brought to sleep ('ingedoesjeld') so the original lambic flavors are preserved. This beer has no head, just like lambic. The lambic is brewed with 60% barley, 40% wheat, last years hop

Low carbonation. No bother. Tart. Apple. A blend obviously, so not the gueuze you expect, but nice.

Bottle shared by BA’s Woody Chandler. Poured clear gold with no head. Lots of oak and lemon on the nose along with a bit of straw. The taste was quite sour with notes of lemon, oak, straw, and cereal. Very dry, low carbonation, very tasty.

375ml bottle. Pours a hazy yellowish orange color topped by only a thin white film even with a vigorous pour. The aroma shows hints of soured apples, lemons, barnyard funk, and a weird burnt rubber smell. The flavor followed suit with the soured apples and lemons mixed with the funk, and more weird rubber tastes. I believe the yeasts have started to each other to cause this. Medium bodied and pretty low on carbonation but still drinkable and refreshing. I had high hopes for this one, but was a little disappointed. I hope to try a better bottle next time.

Pour looked like dehydrated urine with less head. Nose was an oddly smooth funkiness, not harsh, slightly horse, some feint vinegar notes, and some slight lemon. Taste was good, the low carbonation was quite nice, started with some nice bright citrus notes, fineshes with a slight vinegar flavor.

bottle @ WTF OMG! Poured a flat orange. Nose is burnt rubber, autolysis, sour grapes, apples, acetobacter, plum and cheese. Flavor was very very funky, loads of rubber, latex powder, ripe plum, stinky horse blanket, sweaty. Rubber was overwhelming.

2006 Bottle at Ebenezer’s. Orange with no head. Woody horseballs barnyard tart melon aroma. Barn sweaty horseballs tart melon grapefruit with woody dry finish. Nice internal sparkle. Amazing.

Bottle from Toronado S.D. Shady orange color, almost no head, some white bubbles. Acidic, horse blanket, some grass scent, still rather subtle. Acidic to sour taste, stables, rather fresh. Smooth yet flat mouth feel, works for this one though.

Very nice, poured near still and somewhat chilled. Tart but not overwhelmingly so. Some hop and wood coming through. Very enjoyable and quenching.
