Body is hazy medium to dark yellow, bottle conditioned.
Aroma is lightly malty (toasted grain), moderately yeasty (barnyard, horseblanket, cobwebs), with notes of sour apple and lemon peel.
Flavor is lightly to moderately sweet, moderately to heavily acidic.
Finish is lightly sweet, moderately to heavily acidic, lightly bitter.
Medium body, watery texture, no carbonation, lightly to moderately astringent.
I won’t lie...I prefer some carbonation in beer...it’s part of what makes beer beer, after all. It helps transport the aroma to your nostrils, looks nice, and it provides a lively, velvety/fluffy mouthfeel. So this sort of lambic is at a disadvantage from the start. That said, this is still a delicious lambic...nearly perfect balance as with virtually everything from 3F (clean, and very sour but not harshly so), and an enticing, if more subtle than usual, aroma. Pours a lighter than expected carbonation- a bit on the flatter side, but still some carb, deep coppery brownish color with a thin fizzy head but fades to nothing. Aroma is apple cider, greeen apple skin a bit of diacetaldehyde, woody, oak, hints of vanilla, white cedar wood, solventy, paint thinnner, harsh citric lactic aand even a bit of acedic acid- with some chlorine phenols typical of 3F- as it warms it starts to mellow with a nicer sour aroma. Fresh pungent apple flavor with prickly pear, sour apple, citric acid, lactic, citrus fruits, woody and bitter tannins make for a slight astringency at the end. Mouthfeel is nice and smooth with lot sof lacitc and citrus acid - lemony and mouthpuckering at the end with just a bit of that sharp sourness that hurts the tips of the tongue. Grapefruit sourness with more lactic and hints iof vinegear acedic in the finish. Nice real sour gueze but wierd. Still has a few of those traditional 3F qualities though. Forget “barnyard,” the whole damn farm is packed into this bottle... manure, leather saddle, horse blanket, damp straw... you name it. Light to medium-bodied with a lightly creamy mouthfeel and ticklish carbonation. Very sour and moderately bitter with no sweetness. Acidic, bitter, and then dry finish. Aroma of wood, vanilla, brett, leather, some citrus, and a bit of floral hops. Flavor is lemon, oak, a hint of bitterness, bright fruits, funky tartness. Finish is tart but not dry (As far as lambics go) Very nice. | 3.8 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 3/5 | 7/10 | 4/5 | 16/20 | Oct 6, 2009 looks like my pee after a hard day without much water in the summer. the aroma tells me i’m about to be smiling ear to ear with a delicious pain in my jaw. taste is a bit sweeter and less tart than i was expecting. strong yet well balanced wood flavor from first sip to last. a bit of mango and dried cantaloupe in here that is a treat. sour creeps up as this is drunk down. from a lingering tart at first to a stronger finish that really does remind me of unsweetened lemon juice. a nice one that i can tell lumpy about, because that man needs his uncarbonated beverages.
