Commercial Description:
Blend of 1, 2 and 3 year old lambic. Fermented and lagered in oak vessels. In this bottle the young yeast is brought to sleep ('ingedoesjeld') so the original lambic flavors are preserved. This beer has no head, just like lambic. The lambic is brewed with 60% barley, 40% wheat, last years hop

Bottle, bought @ Ølbutikken, Cph.
Well, the cork was nearly impossible to get out... but it finally came to. Pours a clear dark amber. A small, creamy, off-white head is created while pouring, but it soon dimishes into small puddles of foam on the surface, clinging to the sites of my glass. Few, tiny bubbles flow lazily towards the surface. Aroma has lots of oranges, a good oaky feel as well as a classic funkiness. Low carbonation, almost flat. Flavour is quite mild, only medium sour, some citric and orange notes keeping up well with the aroma. The finish has a pleasant dryness, where the wood again makes its presence known. Very clear oak mixing with apple, lemons and oranges. It is a very good gueuze, but somehow it feels restrained - as if 3 fonteinen was reluctant to go the whole way and settled for something just below their average standard. I’ll still enjoy sipping the rest of the bottle :o)

Bottle. Pours clear dark yellow with a spare, fizzy, white head, mostly diminishing with spare lacing. Aroma is average malt (bread, hay, straw, meal), average hops (flowers, grass), heavy yeast (barnyard, earth) with notes of wood, pepper, and coriander. Medium bodied, thin texture, flat carbonation, and a bitter finish. Long duration, light sweetness, heavy acidity and bitterness. Toasted sesame notes.

Dark golden color, almost amber, no head. Nose is sour citrus and hay, some funky urea in the back. A little straightforward. Mouth is pretty flat and disappointing, almost watery. Acidic flavor and a little dusty, but very simple. Short lived palate, citrus outlasting the slightly creamy lactic notes and texture. Not very impressive in its lack of both complexity and aggression, but it’s still a lambic.

Just another part of a string of great beers. Pours orange with very little head. The aroma is very sour, funky yeast, citric, lactic, smooth and malty with a touch of sweetness balancing the sour and a is a touch lemony. Medium smooth lush body with no carbonation. The flavor starts with the balance of maltiness, funky wild yeast and sourness. All are apparent, but none overpowers. There is also some tangy citrus. The finish is very tart and refreshing. Another big winner from 3 Fonteinen.

I picked up a 12.7 oz bottle of this at the Sam-apostrophe-s in Downers Grove, IL. It poured a golden amber body, clear and headless as advertized. The aroma was wet hay, a bleu cheese, some watered pink grapefruit juice, and potting soil. The flavor had more acidity than the nose suggested and a taste of vinegar was added along with some green grape skins. The finish was sour and dry but not overpowering. Nice.

Bottle from West Lakeview. Beer pours muddy orangey gold. No head, no carbonation, which I think hurts this one. Nose is a bit cheesy and barnyard, earthy and sour like vomit, but in a good way. Taste is much the same, a bit one dimensional, pretty sour, though nothing amazing. Okay.
