Commercial Description:
Blend of 1, 2 and 3 year old lambic. Fermented and lagered in oak vessels. In this bottle the young yeast is brought to sleep ('ingedoesjeld') so the original lambic flavors are preserved. This beer has no head, just like lambic. The lambic is brewed with 60% barley, 40% wheat, last years hop

Poured an almost completely clear orange, no head at all. Aroma is funky goodness. Green apples, pears, hay, sourdough starter. So very complex. Flavor is more of the same Lambic goodness, I really get some cider-like qualities. There is a slight wood like quality that balances the sour out nicely. Finishes tart and dry. Excellent beer.

Bottle from Belmont Station in Portland, OR--Poured a fuzzy cider-esque golden-copper body with a fluffy white head that went away. Sour, tart, wheaten nose with lots of pucker factor. Funky, yet subtle and dainty. Acidic, dry, woody, nd well built gueuze. Yum!

To rate to style or to rate to personal liking...I will try to combine. Aroma is of a white wine with sour apple notes and hints of vinegar, wood, lemon and yeast. Appearance is cloudy apple juice with minimal carbonation, with the thinest of white heads around the edge. Flavor is sweet for a beer, apple, white wine, tart and wheat. Palate is thin but smooth, a slight sourness. For my first Lambic, it was a lot different than what I was expecting, still decent. And as strange as this beer was to me, I like it, I think its well done, balanced and not overpowering.

Sadly not what I’d hoped for. Watery with only the faintest sourness. The aroma was what I’d hope four - sour tart funk.

Aroma: light malt aroma with lots of musty cobweb character and a lemony tartness,
Flavor: sweet and tart flavor with the malt sweetness balanced by lemon tartness, long tart finish,

Bottle: Flavor here is lemon rind, and has a light, musty smell. Extremely bitter and dry on the palate.
